Butter Bean and Tomato Casserole

Here is another detox recipe to start the weekend with. Make up a batch at the start and then you can dip in and out when you need throughout the weekend. A reviving bowl of health. This nutritious one pot meal is simplicity itself plus you can use any other vegetables you have at hand. Perfect for using up those goodies in the crisper that you’ve been meaning to use all week. Plus if you keep a can of beans and tomatoes in the cupboards at all times you can put this meal together at a moments’ notice.

For 4 people:

  • 2 leeks, sliced (or mushrooms, onions)
  • 1 tin (400g/14oz) chopped tomatoes
  • 2 cans (as above) butter beans, drained
  • 150 ml (1/4 pint) vegetable stock

Slice the leeks

Then place in a big pot  with a little water and saute the leeks for about 5 minutes until they are almost soft.

Add half a cube of a vegetable stock cube, or if you prefer vegetable stock, to the pot.

Then half a can of water.

Here I’ve used a Nigella hint and swilled out the tomato can to ensure all the goodness is out of the can and into the dish. tomato can with water

Finally stir and bring to the boil. Simmer for a further 5-10 minutes or until the casserole has thickened.casserole tomate and butter bean

Serve with rice or, if like me, get out the George Forman for sweet potato chips.
